Principles of Food Preparation/ Nutrition and Wellness

     Principles of  Food Preparation is a course that provides students with basic cooking skills and the major principles of food preparation.  Students learn recipe terminology and hands-on techniques of food preparation. Students prepare foods directly related to the major information being taught in the course.  The application of  food principles and cooking skills prepares students to become independent  self-sufficient aware cook’s. Nutrition and Wellness stresses  healthy food choices.  Students study  the  food guide pyramid and how it relates to selection of healthy foods.  Students determine the advantages and limitations of  food labeling and assess foods for content.  The promotion of wellness through this information assists the learner in the reduction of  salt, sugar, and saturated fats in the diet.
     Diets are compared to a healthy eating plan that emphasizes adequate nutrition  and sound information.  Internet research, review of periodicals and current informational discussions regarding weight loss,eating disorders and serving sizes provides students with a framework for healthy food choices. Students utilize cooking assignments to explore and experiment applied theories of basic nutrients :protein, carbohydrates, fats, vitamins, minerals, and water.  They study the food sources that contain these, and how they relate to their overall health.  In the foods laboratory students prepare specific assigned recipes that emphasize strategies for reducing saturated fat, salt, and sugar.  The emphasis of this program is the application of research and theory.
